Creamy Parsnip & Apple Soup with Basli Soup by OMG Food Malta

Ingredients

  • 3 large parsnips, peeled and chopped
  • 1 small apple, peeled and chopped
  • 1 small onion, chopped
  • 2 tbsp Basli red onion & chilli relish
  • 1litre vegetable broth
  • 1 clove garlic, minced
  • 100ml heavy cream
  • ½ tsp ground cumin
  • 1 tbsp olive oil
  • Salt & pepper
  • Toasted walnuts & thyme for garnish

Instructions

  • Sauté onion and garlic until soft. Add parsnips, apple, and cumin, and cook for 2 minutes. Pour in the broth, add salt & pepper and simmer until tender. Add the heavy cream, Basli relish, and blend until smooth. Serve hot, garnished with toasted walnuts, thyme and some olive oil.
