Creamy Parsnip & Apple Soup with Basli Soup by OMG Food Malta
Ingredients
3 large parsnips, peeled and chopped
1 small apple, peeled and chopped
1 small onion, chopped
2 tbsp Basli red onion & chilli relish
1litre vegetable broth
1 clove garlic, minced
100ml heavy cream
½ tsp ground cumin
1 tbsp olive oil
Salt & pepper
Toasted walnuts & thyme for garnish
Instructions
Sauté onion and garlic until soft. Add parsnips, apple, and cumin, and cook for 2 minutes. Pour in the broth, add salt & pepper and simmer until tender. Add the heavy cream, Basli relish, and blend until smooth. Serve hot, garnished with toasted walnuts, thyme and some olive oil.
